3 lbs potatoes, peeled and diced
1 tablespoon butter
salt and pepper
2 large onions, chopped
2 lbs ground beef
2 large carrots, grated
2 (12 ounces) cans beef stock
1 tablespoon cornstarch or cornflour
Recipe
1. Place potatoes in a large saucepan.
2. Cover with water and bring to a boil.
3. Reduce heat, simmer until tender.
4. Drain.
5. Using an electric mixer or whisk, mash potatoes with butter.
6. Season with salt and pepper and set aside.
7. Heat a large skillet.
8. Add beef and onions.
9. Season with salt and pepper.
10. Add carrots and stock.
11. Mix in cornstarch and cook for 10 minutes.
12. Pour into a pie dish and top with mashed potatoes.
13. Place under grill until potatoes begin to turn brown.
