Lou's Quiche

Serves 4.
Pastry
1 cup Sifted flour
1/2 tsp. Salt
1/3 cup Shortening
3-4 tbsp. Cold water
Sift together flour and salt. Cut in shortening until particles are size of small peas. Sprinkle cold water over mixture tossing lightly with a fork until dough is moist enough to hold together. Form into a ball. Roll out on a floured pastry cloth board to a circle 1 1/2 inches larger than inverted 8" pan. Fit pastry loosely into pan. Fold edge to form a rim.
Filling
1 pkg. Sausage or bacon cooked and crumbled
1 cup Swiss cheese
1 cup Cheddar cheese
3 Eggs
1 3/4 cup Half & Half or milk
1/4 cup Minced onion
1/2 tsp. Salt
Sprinkle bottom of crust with sausage or bacon. Combine cheese, eggs, cream, onion and salt. Mix well and pour into pie shell.
Bake in a very hot oven (450 degrees F) 15 minutes. Reduce heat to 300 degrees F and continue baking about 25 minutes or until set. Cool slightly before serving.
