    Makes: 4 sandwiches

    List of Ingredients




    1/2 cup Melted butter
    1/4 cup Olive oil
    8 slices Cracked wheat bread
    4 slices Smoked Cheddar cheese
    12 ounces Roast beef
    8 slices Bacon, cooked
    4 slices Monterey Jack cheese
    4 pieces Leaf lettuce
    8 slices Ripe tomato
    Mayonnaise

    Recipe



    Combine butter with olive oil. Brush 1 side of 4 slices of bread with the butter mixture and place one slice, butter side down, in Panini grill. Top bottom slice of bread with 1 slice of smoked Cheddar cheese, 3 ounces of roast beef, 2 slices of bacon, 1 slice of Monterey Jack cheese, 1 piece of leaf lettuce, 2 slices of tomato. Brush 1 side of remaining slices of bread with mayonnaise and the other side with butter mixture and place bread, butter side up, on the grill. Cook 5 minutes or until browned and cheese melts.

    Substitution Ideas
    Check out your bakery department's variety of breads and choose a French, sourdough or a nice marbled rye. For extra kick, substitute peppered roast beef or peppered bacon or dash some coarse-ground pepper on top of the meat. With more than 300 varieties of American-made cow's milk cheeses available, try using Horseradish Cheddar instead of the Smoked Cheddar, Provolone for the Monterey Jack or any two combinations of your favorites. For a little zip, use coarse-grain mustard or garlic mayonnaise as the condiment.
