Mike Ditka's: Seared Tuna

List of Ingredients
8 ounces sushi-grade tuna
1/2 cup mustard seed
salt & pepper
2 avocados
Salsa
1 mango, diced
1 papaya, diced
1 star fruit, sliced
1 orange, diced
1 kiwi, sliced
1/2 small red onion, chopped
2 teaspoons cilantro, chopped
1/2 cup orange juice
Finely dice up all the fruits except for the star fruit and kiwi. Mix it with the red onions, cilantro and orange juice.
Fried Plantain
1 green plantain
(Sliced lengthwise thin & deep fried)
Tabasco Aioli
1/2 cup mayonnaise
2 teaspoons chopped garlic
3 teaspoons Tabasco
Mix all ingredients and season with a little salt.Recipe
Season the tuna with salt and pepper. Coat it with mustard seeds and sear it in a very hot skillet. Do not cook it. Slice tuna in thin bite-sized portions. Stack up plantain, avocado and tuna into three stacks and place it nicely on the plate. Garnish with the salsa, kiwi and star fruit in slices, and finish it with the Tabasco Aioli streaked across the tuna.
