What does Oscar-winning filmmaker and award-winning wine maker Frances Ford Coppola cook at home?
"Martin Scorsese's mom was a wonderful cook, and her lemon chicken is one of my favorite meals to make," Coppola said in an interview. The chicken is "drowned in lemon juice; as many as 20 lemons are used for a whole chicken," and it's roasted in a very hot oven, "as hot as it gets."
Coppola is a master of many talents. His Niebaum-Coppola Estate Winery makes world-class wines, and he has his own line of pasta and sauces.
I've adapted his recipe for this quick, easy and very tasty dinner in minutes.
List of Ingredients
2 (8-ounce) chicken breasts, with skin
and bones, cut into 2 pieces each
2 Tbsps. olive oil
Salt and freshly ground pepper
3 large garlic cloves, crushed
Juice of 2 lemons (about ¼ cup)
3 Tbsps. fresh oregano leaves
Recipe
Heat the oven to 475 degrees. Place chicken in a roasting pan, skin-side up. Pour olive oil over chicken and sprinkle with salt and pepper to taste. Add garlic, lemon juice and oregano to the pan. Place in oven and roast for 20 minutes. Remove skin before serving. Makes 2 servings.
