    PORCHER'S WANDO RED RICE

    List of Ingredients




    6 oz can tomato paste
    1 cup rice
    1 medium onion, chopped
    4 slices bacon, chopped
    3/4 cup smoked sausage, sliced
    1/2 tsp salt
    1/2 tsp sugar
    Pepper to taste

    Recipe



    1. Fry bacon in skillet until crisp; remove bacon. Sauté onion in bacon drippings until tender.

    2. Add tomato paste and 2 cups water, mixing well. Add sliced sausage, bring to a boil, and let simmer for 15 minutes, stirring frequently. Season with salt, pepper, and sugar.

    3. Combine rice with sauce mix adding 1½ cup water, mixing well — add chopped bacon.

    4. Pour into greased baking dish or pan, mixing well. Cover with aluminum foil, punching several holes in foil with a fork.

    5. Bake at 350° F for 35 minutes, remove foil, and stir rice with a fork. Recover and continue baking for 25 minutes or until done.
