In a big bowl add:
8-10 cups of sliced peaches
Add 2 tablespoons lemon juice, 1 tablespoon vanilla, 1/2 cup powdered sugar and 2 tablespoons flour stir and put into buttered baking dish.
In a food processor mix:
1 3/4 cup flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup granulated sugar
1 teaspoon cinnamon
1 tablespoon lemon zest
Pulse to combine
Add shortening as needed
Pulse until texture is course like course meal
Slowly add water until pastry clumps around blade
Roll out pastry with rolling pin
Lay over peaches and crimp edges
Paint top with egg yolk wash
Make decorative slits
Bake until brown and bubbly 40-50 minutes at 325 degrees
