List of Ingredients
2 limes
2 garlic cloves, crushed
Black pepper (freshly milled)
3 chicken filets cut into small pieces
2 large onions
2 cups shrimp
1 large tomato
Fresh coriander (to your taste)
Sunflower oil
Salt
A little bit of water
Recipe
Make a marinade with the juice of the limes, the crushed garlic and the fresh pepper. Sprinkle over the chicken pieces. Let stand aside for about 1 hour. In the blender, put 1 onion, the shrimp, tomato, coriander and a little bit of water. Blend until smooth.
Heat the oil in a frying pan. When the oil is hot, fry the other onion for about 2 minutes.
Add marinated chicken and cook for another 5 minutes. Add the blended mixture and simmer for 30 minutes. Serve with rice. Makes 4 servings.
Cooking tip: When making chicken dishes with vegetables or any other ingredients, it is a good idea to precook your chicken and then freeze it. When you thaw it out, all that you have to do is add the vegetables.
