Red Buttons' Shrimp Tempura

Large green shrimp, seasonal vegetables - string beans, eggplant and cooking oil. Garnish with grated radish, hot horseradish and ginger root.
Shell shrimp leaving tails attached to flesh, remove black vein. Slit under section of shrimp to prevent excess curling. Wash and dry shrimp and vegetables thoroughly. Cut vegetables about same size as shrimp.
Prepare batter - by beating 1 egg and 1 cup water, add flour, mixing lightly, leave lumpy.
In a deep fryer, heat to very hot 3/4 cup oil. Dip shrimp and vegetables one at a time in batter and drop into hot oil. Large bubbles will form. When bubbles become small, shrimp will be done. Drain excess oil and serve with sauce: 1/4 cup shoyu, 1/2 cup of Bonito Soup, 2 teaspooons sugar and pinch of Accent.
