South of the Border Mac & Cheese

List of Ingredients
2 T. butter
3 tomatoes, cut into chunks
1 green pepper, diced
1/2 onion, minced
2 T. fresh cilantro, minced
1/2 t. salt
2 c. half and half
3 T. flour
12 oz. Monterey Jack Cheese, shredded
1 lb. macaroni, cooked and drained

Recipe
In a large pot, melt butter over medium heat. Add tomatoes,
green pepper, onion, cilantro, and salt, and saute until onions
are translucent (about 10 min.) Stir in half & half, flour
and cheese. Simmer until cheese melts (about 2 min.) Stir
in macaroni and heat through. Dust with Paprika.
