    Dressing
    1/4 cup fresh lime juice
    2 tbsp fish sauce
    1 tsp palm sugar or light brown sugar
    1 large clove garlic, minced
    2 fresh hot chilies (or more to taste), chopped & seeded
    1/2 tsp salt or 1 tsp dried shrimp powder

    Salad
    2 cups grated carrots
    2 green mangos, peeled & grated
    2 tomatoes, chopped & seeded
    leaf lettuce
    1/2 cup chopped peanuts

    Recipe



    Dressing: Combine lime juice, fish sauce, sugar, garlic, chopped chilies and salt, mixing well.

    Salad: In a bowl, mix together grated carrots, mangoes and tomatoes; toss together with dressing. This can be prepared ahead of time to this point and stored, covered in the refrigerator for up to 1 day.

    To serve, line platter with lettuce and mound the salad in the center; garnish with chopped peanuts. Makes 6 to 8 servings. Per 6 servings (without lettuce): 164 calories, 5.5 g protein, 7 g fat, 23 g carbohydrate. Per 8 servings (without lettuce
