This is Christopher Reeve's favorite dish, as made by his wife's mom.


List of Ingredients




Two to three cups of shredded meat from a boiled chicken or turkey

One pound of mushrooms

1 pound of spaghetti

Nutmeg

For sauce:

Three tablespoons of butter

Two tablespoons of flour

Two cups of homemade chicken/turkey broth made from the boiled meat

1 cup heavy cream

One tablespoon of dry white wine

Parmesan cheese

Recipe



Cut the meat from a boiled chicken or turkey breast. Sauté one pound of mushrooms in butter. Add a touch of nutmeg

Make a sauce with the butter, flour and homemade chicken or turkey broth. Remove the sauce from heat and stir in the heavy cream and dry white wine.

Add half the sauce to the meat and half to the spaghetti and mushrooms. Place spaghetti in greased baking dish. Pour chicken mixture over it and mix slightly.

Sprinkle top with Parmesan cheese and bake at 375 degrees until the dish is lightly browned (about 25 to 30 minutes). Serves eight.
