Tom Lampkin's Artichoke Nibbles

List of Ingredients
2 6-ounce jars marinated artichoke hearts
1 medium onion, chopped
1 garlic clove, chopped
4 eggs, beaten
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon oregano
2 tablespoons parsley
1/2 cup cracker or bread crumbs
1/2 pound cheddar cheese, grated
Recipe
Preheat oven to 250 degrees. Drain artichoke hearts, save juice. Chop. In a frying pan, saute onion and garlic in juice from artichokes.
In a bowl, mix eggs, pepper, salt, oregano, parsley, cracker crumbs and cheese. Add the onion/garlic mixture.
Put batter in a 7-by-11 inch greased baking pan. Bake for 30 minutes. Cut into small squares. Let stand for 10 minutes.
Yield: serves 8.
