    This recipe comes form Willard Scotts All-American Cookbook.
    He makes twenty-four pounds at a time; this version makes
    two.

    List of Ingredients




    2 pounds ground pork (75% LEAN)
    2 teaspoons salt
    2 teaspoons sage
    1 1/2 teaspoons ground pepper
    1/2 teaspoon ground red pepper
    1/2 teaspoon brown sugar

    Recipe



    Mix all ingredients together. Shape into eight 4-inch patties. Heat large skillet over medium heat. Add sausage patties four at a time and cook until browned, 5 minutes per side. Transfer to plate lined with paper towels and keep warm. Discard fat. Repeat with remaining patties.

    Makes 8
