Meatless Mondays
List of Ingredients
2 oz, to 1/2 of a small onion, chopped
4 oz can, undrained, dark red kidney beans
1 meatless patty (frozen or thawed)
4 oz unsalted tomato sauce
7 oz undrained, unsalted, stewed tomatoes - chopped
2 tsp chili powder
2 tsp minced garlic (use the jar kind. It's cheap & quick)

Lightly coat iron pan with vegetable oil spray. Heat pan over medium heat.
Chop onion & patty. Toss into pan and brown the onion. Once onion is browned, add beans, sauce, tomatoes, and chili powder.
Bring to a boil, then let simmer over med-low heat, for about 15 minutes. Chili will thicken.
Add garlic, stir, and then add a few dashes of Tabasco (taste to avoid over-heating).
Turn off heat, cover, let sit for 2 to 5 minutes, then dish out & devour.
Goes REALLY well with a small corn muffin and an ice cold, diet cola. Enjoy!
Notes
• Crumbles, instead of the patty, can be used, but I usually have patties on hand and find them easy enough to use.
• Also, to save time & money, keep tiny Tupperware containers on hand for any unused ingredients.
