2 1/2 lb tip roast, cut into small pieces
2 1/2 lb ground chuck
1/2 tablespoon oregano
7 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
2 large onions diced
5 cloves garlic, minced
1 red bell pepper, diced
4 or 5 chipotle peppers in adobo sauce, diced
2 jalapeno peppers ( or use haberno peppers or as I do use both ) diced
1 4 oz can diced green chilies
1 15 oz can crushed tomatoes
1 tablespoon brown sugar
1 tablespoon balsamic vinegar
1/3 cup corn meal
Recipe
1. in a large Dutch oven brown the beef with 2 TBL. chili powder. drain most of the fat. Add two beers, the rest of the chili powder, oregano, cumin, paprika and bring to a boil. turn down and simmer for an hour.
2. Heat up a skillet and caramelize the onions. During the last few minutes, add the garilc and saute. Add onion and garilic to the chili along with chipotles, jaapeno (haberno),green chilies, red pepper, and tomatos. Simmer another 1-2 hours.
3. Add sugar and vinegar. Whisk equal parts of corn meal and water. Bring to boil and stir until it thickens. season to taste.
