    Black Bean And Chorizo Chili

    List of Ingredients




    8 oz, apple wood smoked bacon, coarsely chopped
    1 pound Mexican chorizo
    2 medium onions, diced
    1/4 cup garlic, chopped
    1 can light beer
    1 can chipotle in adobo, chopped, juices reserved
    1 can plum tomatoes, chopped, juices reserved
    6 cups cooked black beans
    1/4 cup chile powder
    1 tsp ground cumin
    1 tsp ground oregano
    salt and pepper to taste
    sliced scallions for garnish

    . Remove chorizo from its casings.
    2. Sautee bacon in a large pot over medium-high heat until brown, about 4 minutes. Add chorizo to the pot and sauté until brown, breaking up clumps with the back of a spoon, about 7 minutes.
    3. Add onions, garlic, cook until soft. Add the beer, and remaining ingredients except for the scallions. Bring to a boil and reduce heat to a simmer. Cook uncovered until chili thickens to desired consistency, stirring occasionally, about 40 minutes.
    4. Season with salt and pepper to taste.
    5. Serve in a bowl, top with sliced scallions.
