Cheat'n On Your Husband Chili

1 T. olive oil
1 pkg. firm tofu, drained & cut into 1/4-in cubes
1 pkg. vegan soysages, cut into chunks
1 onion, chopped
1 green bell pepper, de-seeded and chopped
1/4 c. tamari or soy sauce
2 T. peanut butter
2 T. tomato paste
2 c. frozen corn
3 tomatoes, chopped
1 lg. can kidney or black beans in chili sauce
Salt and freshly ground black pepper
Recipe
Heat the oil in a large pan and saute the tofu, soysages, onion, green pepper and chili until softened and smelling great! About 10 minutes. In a bowl, combine the tamari, peanut butter and tomato paste, then stir into the soysages. Add the corn, tomatoes and the beans in chili sauce. Season well. Simmer for about 30-45 minutes adding a little water if the mixture is too thick. Taste, season with more pepper or tomato paste if it needs it.
