Dad's Favorite Chili

2 tbsp. vegetable oil
1 large onion, finely chopped
1 green bell pepper
2-4 garlic, minced
2 small jalapeno chilies, finely chopped
2 pounds ground beef
2-4 tbsp. mild or hot chili powder (or to taste)
2 28-ounce cans whole or chopped tomatoes
12 ounces tomato paste
1/2 cup water
1 tbsp. brown sugar
2 tsp. salt (or to taste)
1 tsp. dried thyme
1 tsp. ground cumin
1 tsp. ground cinnamon
cayenne pepper, to taste
15 ounce red kidney beans, drained
2 tbsp. chopped, fresh cilantro or parsley
rice, sour cream, grated cheese, chopped jalapeno chilies, onions,
and avocado, to serve (optional)Recipe
1.) in a heavy-based saucepan or Dutch oven, heat the oil over medium
heat. add the onion, bell pepper, garlic, and chilies, and cook until
just softened, stirring frequently, about 8 minutes. add the ground
beef to the pan, breaking it up with a spoonl cook until no pink
remains, about 10 minutes. stir in the chili powder and cook 1 minute.
2.) stir in the tomato, crushing them against the side of the pan if
whole, tomato paste, water, sugar, salt, dried herbs, and spices.
bring to a boil, stirring occasionally. reduce the heat and simmer,
partially covered, about 1 hour. stirr occasionally until slightly
reduced.
3.) stir in the kidney beans and, if you like, season with extra
cayenne pepper. simmer, uncovered, until thickened, about 30 minutes.
stir in the chopped cilantro or parsley, and serve wth rice and a
selection of coniments.
