Gabby’s Southwestern Chili

List of Ingredients
2 T. Light vegetable (canola) oil
2 lbs. Lean beef, course chili ground
2 lg. White onions, finely chopped
1 med. Green bell pepper, finely chopped
4 Cloves of garlic, pressed or minced
6 T. Chili powder (your favorite brand)
1 can (28 oz.) chunky-style tomato sauce
1 can (28 oz.) ready cut tomatoes, with liquid
1 can (8 oz.) tomato paste
1 T. Hungarian paprika (sweet or hot)
1 T. Salt
1 T. Leaf oregano
1 T. Cumin
1 (4 oz.) chocolate candy bar (dark or light), just chocolate
Recipe
In a large (5-6 quart) heavy pot, heat the oil over a medium-high heat. Add the beef, onions, bell pepper and garlic. Let this mixture saute, stirring often for about 5 minutes, then stir in the chili powder. When the onions and bell pepper are tender, stir in the tomato sauce, tomatoes and tomato paste. Stir in a cup of water, then stir in all of the remaining ingredients. Reduce the heat to just a simmer and continue to cook about 1½ hours, stirring occasionally. Serves 6.
If desired several dashes of hot sauce can be added, but only if more “heat” is needed. Now, there is the question of beans in your chili. If you’re a true chili afficionado, there will be no beans, but if you want beans, put “em in! Just add as a final ingredient. Either way you will...
