1 tablespoon Wesson® Pure Vegetable Oil
1 cup chopped onion
1 cup chopped green bell pepper
1 cup sliced celery, thinly sliced
1 package (14 ounces) Lightlife® Smart Ground® Original
1 can (15 ounces) dark red kidney beans, rinsed and drained
1 can (15 ounces) corn kernels, drained
2 cans (14 1/2 ounces) Hunt's® Diced Tomatoes
1 can (6 ounces) Hunt's® Tomato Paste
2 cloves garlic, minced
1 1/2 tablespoons Gebhardt® Chili Powder
1 1/2 tablespoons ground cumin
1 teaspoon salt, or to taste
1/4 teaspoon ground red pepper, or to tasteRecipe
1. Place a Dutch oven and the oil over medium high until hot. Add the onion, green pepper and celery and cook until onions are translucent, stirring frequently.
2. Add the remaining ingredients, bring just to a boil over high heat, reduce heat, cover tightly and simmer 1 hour, stirring occasionally.
3. Note: For a thinner consistency, a small amount of water.
Serving Suggestions
May be served with corn tortillas lightly pan fried and tightly rolled.
