Hearty Buffalo Chili

List of Ingredients
1 lb. ground lean bison
1 cup chopped onion
2 cloves minced garlic
1 cup chopped bell pepper
2-3 tablespoons chili powder
2 teaspoons cocoa powder
2 teaspoons salt
1 teaspoon dried leaf oregano, crushed
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon ground allspice
2 cans (14 1/2 oz. each) diced tomatoes and juice
2 cans (8 oz. each) tomato sauce
1 can (15 oz.) small pinto beans, rinsed and drained
1 can (15 oz.) white or black beans, rinsed and drained
1 cup water
1 can (7 oz.) diced green chilies
Condiments: shredded cheese, chopped green onion, sliced black olives, sour cream, cooked tortilla strips.
Recipe
Coat surface of large pan with nonstick cooking spray. Saute bison for 3 minutes; stirring to crumble. Add onion and garlic, saute 5 additional minutes. Mix in bell pepper, chili powder, cocoa powder, salt, oregano, cinnamon, cumin, black pepper, allspice, and cook 2 minutes. Add tomatoes, tomato sauce, beans, water and chilies. Stir to blend and simmer for 45-60 minutes. Serve with condiments if desired.
