4 large pale green chili peppers
2 large green peppers ( Bell peppers)
2 large red peppers ( Bell peppers)
1 large yellow bell pepper
2 handfuls of serrano peppers
1 handful of red chili peppers
1 handful of yellow chili peppers
several habanera peppers
1 package Polska kielbasa
1 package Bratwurst
1 package Linguisa
2 cans tomato sauce
some cheap Red Zinfandel
1 huge spanish onion
3 bulbs of fresh garlic
1 package fresh mushrooms
Recipe
Peel garlic and mash cloves with the flat side of a chef's knife
De-seed and core peppers except for the serrannos
Cut Bell peppers into thin strips
Cut chili's into rings, (only cut the stems from the serrannos, ring these with seeds intact)
Dice onion into roughly 3/4" chunks
Cut mushrooms into large chunks, leaving small caps intact
Toss veggies into a covered pot with some water and reduce until soft.
**Note: Leave Habanera's whole for easy identification and add to veggie pot after most of the reduction has taken place.
Cook linguica and brats in a shallow pan in approximately 1/4 inch water, add water as needed
Simmer tomato sauce with 1/3 bottle of zinfandel until sauce reduces to just slightly more than before introducing the wine
Slice sausages on the bias and simmer pieces in tomato/wine sauce
When veggies are a slurry, pour off any excess water (Leaving a half inch or so, Ideally it has boiled down to this point) and combine with sausage and sauce
Simmer until desired consistency and serve with bread rolls
