0.5 Kg (1lb) of pork steaks or chicken breasts, cut into bite-size pieces (about the size of a chicken nugget)
3 cups of chopped onion (i.e. 2 large, 3-4 med or 4 small onions - depends how much you like bat breath)
3 cups of chopped green chillies (Jalapenos or Anaheims work really well - de-seed most of them)
1 L (4 cups) of chicken stock
3 cloves of garlic, chopped (or 3 tsps minced)
1 tsp cummin
1 tsp oregano
1 tsp chilli powder or paprika
chopped coriander (cilantro) to taste (no more than a tsp)
4-5 tsp of cornflourRecipe
Brown the meat.
Remove the meat, but leave the juices.
Add everything else except the cornflour.
Simmer until the onions are soft and clear.
Put the meat back in, simmer for another 10 mins.
Slowly add cornflour until the mixture starts to thicken.
Simmer for at least an hour. The longer, the better. The meat gets really tender.
