    Joe Walthall’s Beef Chili

    Source of Recipe

    UCA

    List of Ingredients

    2 lb. Ground Chuck
    1 med. Onion, chopped
    4 Tbsp. Chili Powder
    ¼ Tbsp. Ground Cumin
2 (16 oz) cans diced Tomatoes
    ½ tsp. Salt
    ½ tsp. Garlic Powder
    ½ Tbsp. Cavender’s Seasoning
½ tsp. Ground Red Pepper (suit to taste)
    1 cup Water
1 (16 oz.) can Chili Beans (optional)

    Recipe

Combine dry ingredients and set aside. Cook ground chuck in a large skillet or pot over medium-high heat for approximately 5 minutes, stirring until it crumbles, and is no longer pink. Drain well. Add onion, reduce heat to medium and saute’ until tender. Remove from heat and allow to cool for 1 or 2 minutes. Add dry ingredients and mix well, allowing meat to absorb ingredients evenly. Add tomatoes, beans (if desired) and water. Bring to a low simmer stage, stirring frequently to prevent sticking. Cover and allow to simmer for 5 minutes, remove cover and simmer for an additional 10 minutes, or until desired consistency is obtained. Yields 10-12 servings.
