Killer Piece-of-Tail Chili

3 to 3 1/2 pounds alligator meat
1/2 to 1 pound suet
4 to 5 cups water
4 tablespoons salt, divided
7 tablespoons ground peppercorns, divided
4 tablespoons hot sauce
3 large yellow onions
3 large bell peppers, seeded and diced
3 to 5 cloves garlic
1 cup oil
5 large tomatoes, diced
3 6-ounce cans tomato paste
12 to 15 dried New Mexico Red Chiles, ground
3 tablespoons cumin
1/2 to 1 cup diced jalapenos
1 1/2 to 2 cups red wine
Recipe
Dice alligator meat and suet and boil in water for about 20 to 30 minutes with 3 tablespoons salt, 3 tablespoons ground peppercorns and 2 tablespoons hot sauce. Saute onions, bell pepper, garlic, and 2 tablespoons ground peppercorns in oil. Reduce alligator meat to simer and stir in onion, bell pepper,garlic and 3 tablespoons of peppercorns. Add tomatoes and tomato paste and mix thoroughly. Add ground chiles, 2 tablespoons hot sauce, 1 tablespoon salt, 2 tablespoons peppercorns, cumin and simmer 5 to 10 minutes. Add jalapenos to taste. Stir in red wined and simmer for 2 to 4 hours to blend flavors and tenderize meats. Serve hot.
