    # 1/4 Cup dry sherry
    # 1 Tbsp. olive oil
    # 2 Cups chopped onion
    # 1/2 Cup celery, chopped
    # 1/2 Cup carrot, chopped
    # 1/2 Cup red bell pepper, seeded and chopped
    # 4 Cups cooked black beans
    # 2 Cups chicken stock
    # 2 Tbsp. minced garlic
    # 1 Cup tomatoes, fresh or canned chopped
    # 3 New Mexican Peppers, (oven dry 5-7 min. & crumble)
    # 2 tsp. ground cumin
    # 1/2 tsp. dried oregano
    # 1/4 Cup cilantro, chpd
    # 2 Tbsp. honey
    # 2 Tbsp. tomato paste
    # For garnish - as needed: grated onion & Monterey Jack cheese, & sour cream or yogurt

    In a large, heavy pot, heat sherry and oil over medium heat and saute onions until soft but not browned. Add celery, carrot, and bell pepper and saute 5 minutes, stirring frequently. Add remaining ingredients, except garnishes, and bring to a boil. Lower heat and simmer for 45 minutes-1 hour, covered. Serve garnished with grated onion, cheese, and a dollop of sour cream or yogurt.
    Serves: 6 to 8.
