    1 tablespoon olive oil

    2 medium onions, chopped

    6 garlic cloves, minced

    1 (14 and one-half ounce) can chopped tomatoes, including juice

    1 tablespoon dried oregano

    1 tablespoon ground cumin

    1 tablespoon chili powder

    2 (15-ounce cans) cooked soybeans, or 2 cups cooked, dried soybeans

    Recipe



    Heat the oil in a large pot over medium-high heat and saute the onions and garlic until they are translucent, about 5 minutes. Add the tomatoes and saute for 3 to 4 minutes.

    Stir in the oregano, cumin and chili powder, sauteeing for 2 to 3 minutes more.

    Add the soybeans and bring the mixture to a boil. Reduce the heat to low and simmer for 45 minutes.

    Makes six servings.
