Sam's Vegetarian Chili

1 package frozen tofu (thawed)
1 tablespoon chili powder
1 chopped onion
1 chopped green bell pepper
1 clove garlic, minced
1 tablespoon olive oil
1 16-ounce can chopped tomatoes, or a dozen fresh tomatoes, peeled and chopped
1 16-ounce can dark red kidney beans
1 8-ounce can tomato sauce
2 tablespoons fresh basilRecipe
Crumble and lightly saute tofu. (Tofu is easier to crumble if it is frozen and thawed.) Put into a large pot. Lightly saute garlic, onion and bell pepper in olive oil. Add to the pot.
Add remaining ingredients, except basil, to the pot. Bring to a boil, reduce heat, cover and simmer 30 minutes. Add chopped fresh basil during the last 5 minutes of cooking. (Chili can also be cooked in crock pot on low for 8 hours.)
