Seitan Chili

List of Ingredients
# 2 cups cooked black beans
# 2 cups cooked kidney beans
# 2 cups cooked canellini (sp?) beans
# 1 onion chopped
# chopped garlic (I use about 6 cloves, but I love garlic)
# 1-2 green bell peppers, chopped
# 1-16 oz of seitan (depending on how much you like it)
# 1 tbsp chili powder
# 1 tbsp "cajun seasoning"
(I have no idea what's in this, but it's good.
I've made the recipe without it, and it's fine that way, too.)
# 1-2 tbsp ginger
# tabasco to taste
# 1 cup ketchup
# 1 cup barbeque sauce
# black pepper to taste
# salt to taste
# 1/2 cup molasses
# 1/4 cup brown sugar
# 2-6 tsp "hickory smoke" flavoringRecipe
sautee the onions until almost soft, add garlic, seitan, and peppers and sautee everything together until the onions are soft.
Add seasonings and mix well.
Add beans, and cook for about 20 minutes to let the flavors blend.
(Note: the seasonings won't be as strong if you add them before you cook it all together, but everything will be more infused.
If it isn't spicy enough for you, add more later.)
You can add and substract ingredients freely and this will still taste good.
It's quite hard to mess up.
