SimonP's Hide-a-Veg Chili

List of Ingredients
one large onion
2 cloves crushed garlic
2 Tbsp veg oil
1 lb (half-kg) lean mince
veggies, such as:
red, yellow bell peppers
carrots
cactus (nopales/nopalitos)
celery
peas
sweetcorn
mushrooms
whatever, to your taste ... dice 'em small and they hide in the sauce
1 tin chopped tomatoes
1 good squirt from a tube of tomato paste (or puree)
1 tin kidney beans, drained and rinsed
black pepper
dash Worcestershire sauce
herbs
ground or flaked red chili pepper
Recipe
Chop onion finely. In a large cooking pan, fry with garlic in veg oil until onion is translucent.
Add meat and continue cooking. When meat has browned, add chopped tomatoes and kidney beans and veggies (which have been chopped into half-inch square pieces).
Bring to the boil. Add tomato puree, Worcestershire sauce, herbs and black pepper (to taste, and continue tasting and amending as it cooks).
Now add the red chili pepper carefully - a small amount at a time, and cook for a few minutes and taste the result before adding more).
(Note that the heat from the chili pepper will develop over time.)
Cook for a minimum of 30 minutes total (can be extended to an hour).
Divide into meal-sized portions and freeze.
Alternatives:
Add some red wine during cooking. To use for spag bol, don't add chili or kidney beans.
