2 lbs. ground sirloin
4 cloves minced garlic
1 tablespoon curry powder
2 teaspoons ground coriander
1 teaspoon ground cumin
1 tablespoon lemon juice
2 medium-sized sweet peppers, chopped -- use any two (red, yellow, orange or green) for a colorful combination
Three 15-oz cans diced tomatoes and chilies
One 15-oz can beef broth
One 15-oz can unsweetened coconut milk
1/4 cup ketchup

In a large stock pot, cook ground sirloin and garlic until meat is browned. Drain fat. Stir in curry powder, coriander, cumin and lemon juice until well combined. Stir in chopped sweet peppers, tomatoes and chilies, beef broth, coconut milk and ketchup. Bring to a boil and reduce heat. Simmer uncovered for approximately 30 minutes or until desired consistency. Ladle chili in bowl over hoot cooked rice. May garnish with basil or chopped peanuts. Add salt to taste. Makes 6 generous servings.
