3 c. chopped onion
2 cloves garlic, finely minced
2 Tbsp. bacon drippings
4 lb. stew beef, chopped
coarse
1 tsp. oregano
2 tsp. ground cumin seed
2 Tbsp. chili powder or more
4 c. tomatoes
2 c. hot beef stock
1/3 c. masa harina (Mexican
corn flour)
1 bottle K C barbecue sauce
(Gold label)
2 tsp. cinnamon
Recipe
In a large saucepan saute onions and garlic in bacon
drippings until tender and translucent, about 10 minutes. Add
meat, saute, stirring often, until lightly cooked, no red
showing, about 10 minutes. Sprinkle in oregano, crushed cumin
and chili powder. (Make a paste with chili powder, equal
amount of water and 1/3 the amount of flour.) Stir to blend.
Add tomatoes, hot beef stock and salt to taste. Stir in masa
harina. Bring to boil. Cover and let simmer (stir frequently)
for 1 hour. Taste for final adjustment. For hotter chili, add
more chili powder and cumin. Serve with a side of kidney beans
and diced ham.
