BUFFALO GREEN CHILI

List of Ingredients
1 pound ground buffalo (you can substitute lean ground beef)
1 clove garlic, diced
2 tablespoons butter or margarine, melted
1 tablespoon flour
1/2 teaspoon dried oregano
1 14-ounce can of beef broth
1 4-ounce can roasted whole green chiles, cut into thin strips
Recipe
Brown the buffalo and garlic in the melted butter, over medium-high heat. Sprinkle the flour and oregano over the meat mixture, and stir. Cook for two or three minutes. Slowly add the beef broth until the chili reached the desired thickness. Stir in the green chiles and simmer for five to ten minutes.
I use Buffalo Green Chili for Huevos Rancheros: Top a warm flour tortilla with a fried egg. Smother with Buffalo Green Chili, and top with grated cheese or sour cream.
This makes four serving when used for Huevos Rancheros.
