    List of Ingredients




    2 pounds lean ground beef
    ½ pound ground pork
    1 tablespoon dry thyme
    1 tablespoon dry oregano
    1 tablespoon cumin
    ½ cup paprika
    ¼ cup chili powder
    4 dry bay leaves
    1 tablespoon beef broth paste (or 3 bullion cubes, liquefied into a thick mass)
    2 large Spanish onions, medium dice
    3 large ribs celery, medium dice
    6 to 8 cloves garlic, 1/8 inch slices, or chopped
    1 each, large red, yellow bell peppers, medium dice
    2 Serrano peppers, seeds removed, chopped
    2 cups Burgundy wine
    1 small can Contadina tomato paste (there is a difference in flavor)
    2 medium cans (14.5 to 16 oz.) plum tomatoes, hand crushed, with liquid reserved
    Beef broth (warmed)
    1 large can red kidney beans, drained
    Kosher salt and freshly ground Pepper
    A stack of thick-sliced, grilled French bread

    Recipe



    For the greatest grilled garlic bread. Slice a loaf of French bread into several 1 ½ inch portions, drizzle a little extra virgin olive oil onto both sides and grill or bake until golden brown. Rub each finished portion with fresh garlic. Place 1 or 2 portions in the bottom of each serving bowl and ladle on a hearty portion of Chile Le Bobo.

    Serves 6 to 8
