Chili in the Pumpkin Bowl
Source of Recipe
Brooks
List of Ingredients
1 can Brooks Chili Beans
1 can Brooks Just For Chili Diced Tomatoes
1 medium sized pumpkin
1 lb. ground turkey
1 medium onion, chopped
1 clove garlic, minced
1 cup celery, sliced
3 tsp. chili powder
2 tsp. salt
1 tsp. Worcestershire sauce
1 tsp. red pepper sauce (optional)
1 sweet potato, cubed
1 can corn
Recipe
Scoop out seeds of a pumpkin, butter the inside thoroughly, and bake about 10 minutes per pound at 300° F.
While pumpkin bakes, brown turkey with onion and garlic in a 3-quart sauce pan; drain. Stir in other ingredients, except chili beans and corn. Heat to boiling; reduce heat. Cover and simmer one hour.
Pour into pumpkin, adding the beans and corn. Bake with lid on the pumpkin for 20 minutes. Serve from pumpkin. Serves 6.
Notes: This is a unique chili using sweet potato and corn for an unusual sweetener, along with the usual spicy flavor of the Brooks beans and spices. The turkey used instead of beef reduces fat content. And finally, the pumpkin bowl adds to the effect, giving the chili dinner a little more flare.
