    List of Ingredients




    2 tbsp shortening
    2 pounds to 2-1/2 lbs. boneless beef roast, cubed
    1 medium onion, chopped
    4 small jalapeno peppers, finely chopped
    4 cloves garlic, crushed & minced
    2 cans (15 oz. each) red kidney beans, undrained
    2 cans (15 oz. each) chili beans, undrained
    2 cans (15 oz. each) stewed tomatoes, undrained
    2 envelopes Hy-Vee dry chili seasoning mix
    3 c. to 4 c. tomato juice
    2 tsp chili powder
    1 amount salt (to taste)
    2 tsp vinegar
    1 amount additional water or tomato juice (if required)

    Recipe



    In a large frying pan, melt shortening.
    Add beef and brown meat, along with onion, jalapeno peppers and garlic.
    Drain grease.
    Transfer mixture to a large stockpot.
    Add kidney beans, chili beans, stewed tomatoes, chili seasoning mix, tomato juice, chili powder, salt and vinegar.
    Cook on low heat for at least 2 hours, stirring occasionally.
    If necessary, add a little more water or tomato juice.
