Geary's Winning Chili

1/2 C. butter
2 1/2 Lbs. top sirloin steak, coarsely ground
2 Lbs. top sirloin cubed into 1/4" pieces (all fat removed)
2 green bell peppers, chopped
2 red bell peppers, chopped
3 large onions, chopped
6 garlic cloves, minced fine
1/2 cup snipped parsley
3 (1 lb. cans) tomatoes (chopped into 1" pcs.) including liquid
1/4 C. chili powder
2 Tbl. salt
2 tsp. fresh ground pepper
1 1/2 tsp. cumin
1 1/2 oz. Tabasco sauce, or to taste

In a large pot brown meat in 1/2 C. butter.
Pour off 1/3 cup liquid from meat and saute green and red pepper, onion, garlic and parsley in separate skillet until tender.
Add to meat mixture and then stir in chili powder, salt, pepper and cumin.
Add Tabasco sauce and tomatoes.
Simmer entire mixture 1 hour covered, remove lid and simmer at least 30 minutes longer.
Stir occasionally.
Makes 10 servings.
