MANUELITA LOPEZ'S NEW MEXICO CHILI

2 lb. chop meat (cubed pork or
beef may also be used)
1 1/2 c. water
1 tsp. oregano
1 tsp. garlic powder
7 to 8 chili peppers or 1/4 c.
chili powder
1 c. water
1/8 c. flour
salt (if desired)
Recipe
Brown meat thoroughly. Drain off fat. Blend 1 1/2 cups
water, oregano, garlic powder and chili peppers (or powder) in
a blender. (If using chili peppers, be sure they are ground
well.) Over medium heat, stir chili mixture slowly into meat.
Add 1 cup water to meat chili mixture. Stir well. Slowly stir
in 1/8 cup flour. Cook until mixture boils. Add salt to taste
and stir well. Lower heat and simmer for 20 to 30 minutes or
until chili thickens.
Note: This recipe does not call for refried beans. In
New Mexico, they are served as a side dish.
