    Mahina's Pork Chili

    List of Ingredients




    6 dried whole red chiles
    1 small onion, chopped
    2 cloves garlic, minced
    1/2 teaspoon Mexican oregano
    2 cups water
    1 tablespoon oil
    1/2 - 3/4 pound pork, cut into chunks

    Recipe



    1. Toast chiles on a baking sheet, 10-15 minutes at 250° F.
    2. Remove seeds and stems and crumble chiles into a medium saucepan with onion, garlic, oregano, and water. Simmer 20-30 minutes, uncovered.
    3. Purée in a blender until smooth and pour back into saucepan.
    4. In a medium skillet, sauté pork in oil until browned.
    5. Add pork to puréed sauce and simmer, covered, 1 hour, stirring occasionally and adding water as needed.
