Mike's twelve-beer chili

List of Ingredients
2 tbsp. olive oil
6 lbs. of lean ground beef
4 medium onions, finely diced
8 cloves fresh garlic, minced
3 tsp. cumin powder
2 tbsp. chili powder
4 whole chili peppers
3 tsp. paprika
3 tsp. cayenne pepper (add extra for hotter recipe)
3 fresh jalapeno peppers, chopped
4 tsp. oregano
1 tsp. ground coriander
3/4 tsp. ground black pepper
2 tsp. Tabasco sauce
2 28 oz. cans tomato sauce
2 cans beer (any flavour will do)
1 tbsp. flour
1/2 cup grated Cheddar cheese
Recipe
In a large skillet, heat olive oil and saute meat, onions, garlic in oil until meat is browned. Transfer mixture to a large, deep pot. Add next 10 ingredients and blend thoroughly. Add tomato sauce and one or two cans of beer.
Simmer mixture on low heat for 2 hours, until thickened. Salt, to taste. Remove 1/4 cup of liquid and mix with flour to form a paste. Return paste to pot and blend thoroughly. Simmer additional 11/2 hours over low heat. Sprinkle cheese over top before serving. Serves 6.
