Moose Chili

List of Ingredients
3 pounds cubed moose meat (can substitute with beef)
2 large yellow onions, chopped
3 chipotle peppers, chopped
3 packets McCormick Hot Chili Mix
1 large can (huge) kidney beans; do not drain
2 tablespoons chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
3 tablespoons oregano
3 tablespoons cilantro, dried and chopped
1 tablespoon cumin
2 tablespoons salt
1 jar Pace Picante "Chipotle" Sauce
Virgin Olive Oil
3 cans beer, optional
Recipe
Sauté onions in olive oil until clear. Add chipotle peppers. Mix well and turn down heat.
In another pan, brown meat in olive oil. Add packets of chili mix to meat when it is about halfway brown. Mix well and keep meat moving until browned.
Turn down heat and add picante sauce.
Add onion and peppers. Mix well.
Add beans. Mix well and simmer for about 15 minutes.
Add chili powder, garlic powder, onion powder, oregano, cilantro and cumin.
Add beer (optional) and simmer for 20 minutes.
Add salt, red pepper and garlic to taste.
Poe notes: "Remember that moose is some of the richest and leanest meat out there. When cooking with beef, use less oil and more meat."
Serve with crackers or chips, grated cheese and chopped jalapeno peppers.
