    List of Ingredients




    2 lbs ground beef

    1 lb country sausage

    12 onions, diced

    1½ heads celery

    3 tomatoes, diced

    (2) 32 oz cans crushed tomatoes

    3 bottles of Ommegang (750 ml X 3)

    1½ gallons of beef stock

    6 tbsp chili powder

    ½ tbsp cinnamon

    1 bunch fresh parsley

    1 lb pinto beans, dried

    2 Bay leaves

    salt and pepper to taste

    Roux (flour and butter)

    Recipe



    Cook beef and sausage. Remove from pot and saute onions and celery. Add chili powder, cinammon, Bay leaves and season. Add diced tomato and cook 5 minute. Add dried beans and cook 5 more minutes. Add Ommegang, canned tomato and stock. Simmer until Pintos are Al Dente, about 1½ hours. Thicken with Roux. Finish with herbs.
