12 lb. stew meat, trimmed of excess fat and coarsely ground
3 lb. pork butt, trimmed of excess fat and coarsely ground
5 lb. venison, coarsely ground
8 yellow onions, chopped
4 cloves of garlic, minced
8 fresh jalapeno peppers, seed and chop bottom half only
2 (8oz) jars Williams chili seasoning
3 (2oz) jars Mexen chili powder
1 (3oz) jar Gebhardt's chili powder
1 Tbs. ground cumin
1 Tbs. garlic powder
Salt and pepper to taste
4 Tbs. cayenne pepper
4 (15 ounce) cans tomato sauce
4 (16 ounce) cans tomatoes, squeezed
Masa Harina *
Recipe
Sauté onions, garlic and peppers in butter till tender. Add meat and brown. Transfer to chili pot and add remaining ingredients except masa. Add water to make it manageable. Simmer for at least 3 to 4 hours, till meat is tender, adding more water as necessary. Make a thin paste with masa and water, and stir into chili to tighten liquid. Cook for 10 minutes and add cumin to enhance aroma. Cook another 20 minutes and get ready for complements.
