    3 lb. chili meat (2 lb. chuck
    and 1 lb. pork)
    7 large tomatoes
    2 large onions
    1 extra large bell pepper
    4 red chili peppers
    2 cloves garlic
    1 (15 oz.) can tomato paste
    1 (4 oz.) can chili powder
    1 1/2 tsp. each: salt, black
    pepper, cayenne pepper,
    allspice, cinnamon
    1 Tbsp each: garlic salt,
    cumin, brown sugar

    Mix two-thirds of the chili powder with all other spices
    until well blended. Knead three-fourths of the spices into the
    meat and put to the side. Finely chop onions, peppers, garlic
    and tomatoes. Slowly brown onions and meat, gradually add
    green pepper, garlic and finally the chili peppers. When the
    meat is completely browned, add tomatoes and remaining spices,
    mix well. When the tomatoes are cooked down and the sauce
    begins to appear, turn fire up and add brown sugar and tomato
    paste (additional tomatoes can be used instead of paste, if
    preferred). If tomato paste is used, gradually add water to
    thin out the sauce. Reduce fire to low and cook to desired
    consistency (at least 2 hours).
