    Carroll Shelbys Chili

    List of Ingredients




    4 tablespoons olive oil
    4 pounds beef brisket, trimmed, cut into 3/4-inch cubes
    2 large onions, minced
    6 cloves garlic, minced
    1-1/2 cups red wine
    1-1/2 cups favorite store-bought smokey barbecue sauce
    1 ounce square unsweetened chocolate
    1 package Carroll Shelby's Chili Kit
    1/2 cup sun-dried tomatoes, slivered

    Recipe



    To make chili, heat 2 tablespoons of oil in a large pot and brown brisket in batches over medium-high heat, adding more oil as needed. When cooked, transfer to a platter. Add onions and garlic to pot and sauté about 10 minutes. Stir in wine and barbecue sauce. Add chocolate and stir until melted. Season with large Spice Packet from Carroll Shelby's Chili Kit. Add cayenne (Small Red Packet) and salt to taste. Add sun-dried tomatoes and browned brisket. Simmer chili over low heat, covered and stirring occasionally. Continue simmering chili, covered, for another 1 to 1-1/2 hours, or until meat is very tender. Serve hot chili topped with Vidalia Onion Relish. Makes 8 to 10 servings.
