    Smoky Hot Beef Chili

    1 T oil
    3/4 lb. beef sirloin, cut into 1 inch pieces
    1 onion, chopped
    2 T chili powder
    2 T ground dry mustard
    1 T ground cumin seed
    2 T cilantro leaves, crushed
    3 T sugar
    1 green pepper, chopped
    2 cloves garlic, crushed
    2 28 oz. cans italian plum tomatoes, undrained, coarsley chopped in
    processor, with juice
    2 chipolte peppers cut up
    1 tsp. salt
    1 tsp. liquid mesquite smoke flavoring
    1/2 tsp. black pepper

    Heat oil in lg. saucepan over med. high heat. Add beef; cook 8 to 10 minutes or until beef is well browned. Stir in onions,bell peppers,spices and garlic. Cook 5 minutes. Stir in all remaining chili ingredients. Bring to boil. Reduce heat to low; simmer 1 hour. Stirring occassionally. Add 4 cups of canned red beans,(or kidney, or chilibeans) whichever you prefer. Simmer 25 mintues more. Serve in
    bowls with sour cream, chopped avacado,(mixed with 1 tsp. lime juice), and shredded cojack cheese.
