    South Texas 3 Meat Chili

    1 lb. chili meat (or ground beef)
    1 lb. 3/8 inch fine diced beef cubes
    12 ounces uncooked Chorizo sausage
    1 medium onion
    1 fresh poblano pepper
    2 fresh jalapeno peppers
    6 large cloves or garlic, minced
    3 tablespoons chili powder
    2 teaspoons each Salt, ground pepper, and ground Cumin
    1/4 to 1/2 teaspoon cayenne pepper
    2 cups beef broth
    1 can (14 1/2) ounce crushed tomatoes
    1 can ( 8 oz.) tomato sauce

    Squeeze chorizo from casings into a large skillet. Add ground beef. Place skillet over medium-high heat. Stir, break meat into small crumbles with cooking spoon. Cook 6-8 minutes, or until browned. Remove to paper towels to drain grease.

    Meanwhile, chop onion. Remove stems and seeds from poblanos and jalapenos, chop finely. Mince garlic.

    Place cubed beef in a 5-6 quart pot over meduim-high heat with onion, garlic and peppers. brown 6-8 minutes, or untill is no longer pink. Add ground meat mixture, chili powder, salt, pepper, cumin and cayenne. Stir to combine, cook 2 more minutes.

    Stir in beef broth, tomatoes and tomato sauce. Bring to a boil, cover pot and reduce heaet to low. Simmer gently for 50 mintes, stirring occasionally. Serve while hot.
