Spicy mushroom and chicken chili

3/4 pound boneless, skinless chicken thighs, cut into 11/2-inch pieces
2 cups canned tomatoes with juice
1 medium jalapeno pepper, seeded and diced (about 1 tablespoon)
1 cup drained and rinsed, canned red kidney beans
1 cup frozen corn
2 teaspoons chili powder
1 teaspoon ground cumin
2 medium garlic cloves, crushed
1/2 pound sliced mushrooms (any type; about 3 cups)
Salt and freshly ground pepperRecipe
Heat a large nonstick skillet on medium-high heat. Add the chicken, tomatoes, jalapeno pepper, beans, corn, chili powder, cumin, garlic, mushrooms and 1/2 cup water. Bring to a simmer; reduce heat to medium-low. Simmer, uncovered, 15 minutes. Add salt and pepper to taste.
