12 - 8 oz. Stockyards Steakhouse Burgers
1/4 Cup Lard or Vegetable Oil
4 Tbs. Chili Powder
2 Tbs. Cumin
6 Garlic Cloves, Minced
2 Large Onions, Finely Chopped
1- 2 Tsp. Epicure Seasoning (item #9901)
Two Jalapeño Peppers Finely Chopped (optional)
1 Tbs. Oregano
1 Large Bay leaf, Crumbled
1/2 Bottle Dark Beer
2 Tbs. Paprika
2 Tbs. Cider Vinegar
1½ Cups Beef Broth
One 4-oz Can Diced Green Chilies
Two 14½-oz Can Stewed Tomatoes
Dash of Tabasco sauce
2 Cans Kidney or Pinto Beans, Drained
1 Small Can Tomato PasteRecipe
Working in batches, brown steakhouse burgers in lard or oil breaking the meat in to large bite-size pieces, add black pepper to taste. Drain meat and add chili powder, cumin, garlic, chopped onions, Epicure Seasoning and Jalapeños. Cook 30-45 minutes using as little liquid as possible; add beef broth only as necessary. Stir frequently.
Stir in remaining ingredients except beans. Simmer 30-45 minutes. Stir frequently.
Dissolve 1 tablespoon masa flour into remaining beef broth, pour into chili. Add beans and tomato paste. Simmer 30 minutes stirring frequently.
